However, creating a quality menu and restaurant concept required more than a growing desire for fresh, wholesome food - it required an experienced partnership and dedicated development team. And that is where our story begins...
A Growing Movement Creates a Demand
Primal Kitchen Restaurants were born from the perfect storm of customer demand and the meeting of two key individuals. Within the last decade, the Internet has been creating a quiet revolution of a generation of people who are demanding fresh, organic, locally sourced dining options. Documentaries such as The World According to Monsanto and Food Inc., as well as countless studies on the dangers of eating over-processed food, have opened up consumers’ eyes to the benefits of eating organic. While there were some restaurants that offered organic options, many of them sacrificed taste for nutrition. Additionally, organic restaurants often charged more than most fast-casual restaurants, which was a turn off for many budget-conscious customers. This led to a quandary in which consumers had to sacrifice something, whether it was reasonable prices, quality ingredients, bad taste, or poor service and atmosphere.
A Passion for Clean Living and Fitness
The concept of Primal Kitchen had always been a dream for Mark Sisson. A former elite endurance athlete and bestselling author, Mark always had a passion for clean living and fitness. Using his fame, as well as his academic background and desire to help others live life to the fullest, he created his own empire over the last several decades and accumulated a legion of followers who were inspired by his clean living and fitness advice. While he owns several smaller specialty food concepts, he always dreamed of developing a chain of organic, clean restaurants that were accessible by the masses.
A Passion for Growth
Meanwhile, Mario Altiery had grown up in the restaurant industry, working in his family’s restaurants since he was 11 years old. Through the years, he drew upon his restaurant experience on many occasions. Through his work as president and founder of Upside Group Franchise Consulting, he built many successful brands from scratch. Mario, an athlete himself, found Mark’s website and became a supporter of Mark’s clean living and fitness philosophies.
A Chance Meeting Leads to a Dynamic Partnership
Although Mark wished to open his own restaurant, he knew that he couldn’t do it alone. It was through a chance meeting with Mario that his dream started to become a reality. Mark and Mario developed the Primal Kitchen concept after realizing that consumers repeatedly complained that there were not a lot of fast-casual, clean eating restaurant options in their areas. They saw the massive gap in the marketplace for consumers who wanted to eat conveniently but were also concerned with what they were putting into their bodies and who did not want to compromise taste and enjoyment.
A Dream Intersects with Customer Demand
However, Mark and Mario faced a daunting struggle of creating a menu that offered something for everyone while using only the freshest ingredients possible, still remaining tasty and flavorful, and within the price range for the average consumer. Mark and Mario began a painstaking journey of working with top chefs to select ingredients that met the strictest standards of taste, natural healthfulness, and phytonutrient potency. It took two years, but after hard work and perseverance, they eventually created a menu that offered cleaner and tastier options than any other fast-casual concept in existence.
